If you’re wondering what to do with leftover turkey breast, I got you! This EASY turkey crostini recipe is made with ALL leftovers including brie and cranberry sauce!
Thanksgiving leftovers are the best part of the next day. But sometimes you want to change things up a bit right? And if you’re expecting late holiday company, this crostini is the perfect thing to serve as an appetizer, snack or lunch!
You could also serve this on Thanksgiving as a “tease” especially if you’re not planning on serving turkey. It would also be a delicious Christmas appetizer!
All you need is a crispy baguette, some creamy brie cheese, a can of cranberry sauce and your leftover turkey (breast or thighs)!
It comes together so nicely and is the PERFECT combination of flavors!
The Cranberry Sauce
If you have leftover sauce from Thanksgiving, USE IT!
Otherwise, you can mix up your own quickly!
I used canned whole cranberry sauce which I think is perfect for topping. You can actually SEE the cranberries which is nice plus it holds better together. To the sauce, I added orange zest and fresh rosemary sprigs and simmered it until the flavors infused. The added flavors takes your boring canned sauce to the next level. The longer the flavors simmer, the better!
If you do not have brie on hand OR don’t have any rosemary, don’t worry! There are other options!!
- No leftover turkey?
- Use chicken breast if you roasted a chicken instead
- Purchase sliced turkey form your deli if you did not roast a turkey!
- Ran out of cranberry sauce?
- Use Strawberry jam with a little lemon juice for some added tartness
- No fresh rosemary?
- Use ANY fresh herbs you have in your fridge
- Use dried rosemary
- Use some arugula on top instead
- No brie cheese?
- Use whatever soft cheese you have! Mozzarella, monterey jack or even American would melt very well!
- No fresh bread?
- Use some crackers or just cut up some pita bread into rounds!

Can you freeze leftover turkey breasts?
Yes! Just make sure you wrap it WELL to prevent freezer burn! It should last at least 6 weeks.
When you’re ready to use it, just simply thaw it out a month later, just in time for Christmas brunch and serve these as a pre-dinner bite!

Leftover Turkey Breast Crostini
- 1 Fresh Baguette
- 1 lb. Sliced Turkey Breast
- 1 14 oz. Can Whole Berry Cranberry Sauce
- 10 oz. Brie Cheese
- 1/4 Cup Olive Oil
- 1 Tbsp. Fresh Rosemary
- 1 Small Orange Zested
- 1/2 Tsp. Salt
- 1/4 Tsp. Pepper
- Preheat oven to 350 F. Slice baguette into 1/4 ” rounds and lay on baking sheet.
- Add salt and pepper to olive oil and mix. Brush each round generously with olive oil and bake for 10 minutes.
- While baking, add cranberry sauce, orange zest and chopped rosemary to saucepan. Simmer over medium to low heat for 10 minutes.
- Take out crostini and shmear some brie cheese onto each slice.
- Then add a little bit of turkey to each crostini and finish with a dollop of cranberry sauce!
- Serve with rosemary as a garnish if desired.
