These Hummus Sweet Potato Rounds are gluten free, whole 30, vegetarian AND vegan and you would never know it! Plus, they take only 20 minutes! They are the ideal party appetizer that will suit any palate!

Gluten Free, Vegan Vegetarian and Whole 30

This is my first vegan appetizer and guess what?

I bet if you tried one before reading this, you would have never guessed it was vegan!

I think our minds go to tofu when we think vegan right??

Me, personally, am not vegan. I am Greek. Is an explanation necessary?

Lets just put it this way…if you came to one of my family parties, you too would get asked the question, “What do you mean you eat no meat!?!” …with all conversation coming to a complete halt…

(This quote is from the hilarious movie My Big Fat Greek Wedding in case you haven’t seen it.)

Meat or no meat, you do not need to be vegan to eat healthy!

Healthy eating is a priority in our household especially now with raising a son to do the same.

I try my best to incorporate super foods into my meals while removing any processed food and refined sugars. Wheat is even on the table for discussion these days.

With that said, healthy does not mean it has to lack in the flavor department!

PLUS you cannot ignore other tastes that may be attending your party. It is important to keep everyone in mind and just makes sense to have at least one appetizer that really all guests including omnivores could enjoy!

These sweet potato rounds with creamy hummus are just so tasty and for ONCE, you and your guests can leave a party without feeling like you have to go on a 3 day detox!

Feel free to use ANY store-bought hummus you like OR you can make this one here!

The hummus here has a little turmeric added. Turmeric is a very healthy spice AND it gives the hummus a beautiful bright yellow color!

I also added a touch of cinnamon because it goes great with sweet potatoes!

I especially love hummus because you can add or take away any spice you dislike or prefer and it is still just as tasty!

Skinny Sweet Potatoes

You’re probably thinking one of two things…

“Are these sweet potatoes going to make me skinny?” or “Is a skinny sweet potato different than a normal one?!”

Possibly and no!

A “skinny” sweet potato is just describing the kind of potatoes I want you to buy for these rounds! Like these here –>

I do not know the technical term so skinny is what we’re going with!

By skinny, I mean not a thick or fat sweet potato! You want bite sized rounds so they can be easily popped in one’s mouth.

Try not to get the ones that are too pointy on the ends so you have consistent rounds and not much waste.

Here comes the math teacher in me…

Aim for a diameter of about 2 inches and a width of about 1/2″.

Slice rounds about 2″ in width.

 Lay on a baking sheet that is greased with olive oil. Make sure both sides are nicely covered and season with salt and pepper and roast on bottom rack for 10 min.

While baking, add all of the hummus ingredients to a food processor and blend until nice and smooth!

Flip rounds when they come out of the oven so your guests can see the lovely browned edges.

Lay slices onto large plate and drizzle remaining oil from pan over top.

Pipe hummus into pastry bag with large hole OR ziplock baggie and snip off corner!

Make sure your hole is about 1″ wide.

Pipe hummus onto the top of each! Trust me, it’s easier than spooning!!

Ingredients
  • 3 Sweet Potatoes *Skinny
Hummus
  • 1 15.5 oz Can Chickpeas
  • 2+ Tbsp Reserved Chickpea Liquid
  • 1 Lemon
  • 1 Tbsp. Tahini
  • 1/4 Tsp. Turmeric
  • 1/2 Tsp. Cinnamon
  • 1/4 Tsp. Onion Powder
  • 1/2 Tsp. Salt
  • 1/8 Tsp. Pepper
  • 1/2 Tsp. Paprika
  • 1/2 Cup Extra Virgin Olive Oil
  • 3/4 Tbsp. Honey *Optional
Instructions
  1. Slice "skinny" sweet potatoes into rounds that are about 1/2" in width.

  2. Place on a large baking sheet and liberally coat potatoes in olive oil and season with salt and pepper. Use more than 1/2 cup of oil if needed. 

  3. Bake on bottom rack of oven for 8-10 minutes at 425 F. You want lightly browned edges on the bottom!

  4. While baking, prepare hummus by using the chickpea lid to drain the chickpea liquid into a small bowl. Then add all hummus ingredients to a food processor and blend until smooth and creamy. Add more chickpea liquid if too thick!

  5. Take sweet potato rounds out when lightly browned and fork tender. Do not overcook! You do not want mushy potatoes!

  6. When slightly cooled, place potatoes onto plate (browned side up) and drizzle with remaining olive oil from baking sheet.

  7. Place hummus in piping bag. Snip corner if using ziplock bag. Pipe a dollop onto each round. Make sure you can still see the potato! (You can try to spoon on the hummus but it will not be easy or look as neat!)

  8. Garnish with more olive oil and/or fresh herbs!

Recipe Notes

*Skinny sweet potatoes are just the narrow ones so your rounds are bite sized!

*Party Tips*

These are best served warm!

You can prepare the hummus ahead or use any store-bought favorite!

Feel free to play around with the hummus as you wish! Consistency should be thick enough so it does not spill over top of the potato round! (not pretty)
